We clean out our counter top size fridge every 2 weeks, so we can stock up fresh foods.
This time, we had half a red pepper, some cheddar cheese and ham left in the fridge, oh and a few roti. We bought the avocado the night before, and hence, Saturday morning burrito was a obvious choice. To make it a breakfast meal, scrambled eggs are the essential ingredient.
Gabe grilled the burritos on his cast iron pan. The grill marks make such a big difference for the burrito's taste!
