pumpkin korma re-invented

so we bought a pumpkin and wanted to make something out of it. this meal focus on the pumpkin in which i chopped up into large chunks, then stewed with some korma paste out of a jar.

dinner for two, here you see us eating chinese style aka, two dishes and our bowls of rice. so you have the korma pumpkin topped with chicken breast, zuccini, and shrimp. the green dish is pea sprouts stir fried with garlic (yum!).

after dinner, we realized how much pumpkin we had, and called to see if william wanted a lunch for work tomorrow. he came over and this is what he had for him =]

the very next day, i was determined to re-invent the pumpkin korma. not because it tasted bad, it actually was really good! but eating all that pumpkin between the two of us was a huge task so i decided on turning it into a soup

i looked around online to get some ideas and decided that i wanted to add components rather than just plainly liquify it with milk/cream/stock. i decided to add a can of tomatoes to carmelizing onions to form a new soup base, then i added a small can of stock and a little bit of milk and voila!

okay so basically its the same meal, but now the left over korma chicken zuccini shrimp was piled on top of the rice with some left over pea sprouts intermingled. And we now had a soup! that was nice and earthy, spicy (korma + i added some cayenne) and then some sprinkled toasted pumpkin seed.

i take a lot of pride when i'm able to whip out a good meal out of leftovers.

so smoke salmon on bagel.. once again.. capers, cream cheese.. a personal favourite. i found some left over chickpeas from darrick's indian food night, i ground up the left over pistachuios and made a dressing with it.. olive oil, oregano, apple cider vinegar to taste. half an orange pepper, half a cucumber. a little too much dressing... but it was tasty =]

many lunches

yes i eat lunch on my own pretty much everyday. my grandma is at her day programs.. so i'm usually eating leftovers or mashing up weird various things just to complete a meal. very much different from when may and I lived together.. and cooking was fun...and we went grocery shopping often. my family's house is just too foreign, i'll never get comfortable cooking/eating here

stuffed bagette

so we got some dempster's oven ready bagettes from tiff's dad. basically you pop it in the oven to finish it off for 8 mins and its like having a fresh bagette. its a pretty good product but i'm a little weary abuot the preservatives it has because the uncooked bagette stays in an air balloon for like 2 months, i dont know how that works without perservatives. so.. i stuffed the bagette with half a tomato chopped up.. some bacon peices (i dont know why we always have a few slices of bacon leftover in the fridge, it isn't me) some cheese, onion and garlic and olive oil. baked it.. and at the whole thing.. yes.. i'm fat. oh i also cut up an avacodo that was drying up in the fridge

not the best photo to represent a dinner that darrick and tiffany made the night before.. but i only photographed the leftovers... and rememberd to half way thru my lunch. you have a cod/potato/chickpea tomato sauce/curry as well as a paneer chicken curry with rice made from scratch. then i toasted a bagel with some cream cheese =] very very yummy.. thanks D & T
