chili n' cornbread!

about time we made chili n' cornbread! i've been talking about it for a while.. and we made a gianormousaurus pot over a week ago. It was likely the best i've ever made.. and i managed to clear out some of our pantry in the process. its a simple quick meal, keeps really well, although we finished it in less than a week with the help of some friends.

cornbread n' chili

the chili recipe changes everytime.. and usually i try to incorporate red white or beer into it.. but this time.. we had some white wine.. so i deglazed the pan with that everytime i "browned" things..

a vague ingredient list:
2 large onions
2.5lbs ground beef
3 chorizo sausages
1lb of carrots
1 celery bunch
2 cups frozen corn
garlic
challots
1 can mixed beans
2 cans chickpeas

and the cornbread recipe is from Michael Smith.. and we baked it on a cast iron pan. booya! of course May loves the cornbread, because it taste almost like dessert haha =]

noodles n' soup

i think lately we've been having more and more noodles n' soup. why? because its comforting.. tasty and warms us up on these cold frigid windy days. also, we bought 7 bags of dumplings for $10 from foodie mart. haha

here we have dumplings, with instant noodles, peasprouts garlic on top and a little drizzle of chili oil. this was one of my lunches during the day while may was at work

thai curry soup

and here is a thai curry soup creation that we made together one evening. basically you've got curry powder, coconut milk, lime leaves and basil to make the base of the soup. complimenting ingredients are all the usual veggies like snow peas, carrots, onions and then a healthy seafood dose of shrimp and clams! booya! oh yeah you betcha that is some awesome garlic bread you're looking at
