This recipe stood out as I've never made my own 'chicken dippers' and it looked like a healthy, simple and tasty dish to try. If you'd like to give this dish a go then read on!
So, here is what you'll need... (serves 3-4 people)
And this is what to do...
First.. Preheat the oven to 190°C, (fan oven 170°C) or Gas Mark 5
Then.. Lightly rinse the chicken breast, pat dry and cut into long, thin strips (or nuggets like me).. no picture here as although I love to eat meat I don't really like the look of it raw!
Next, place the oatcakes in a food processor and whiz until crushed. Add the chilli powder (to any plain oat cakes) and whiz for 10 seconds, then place on a large plate or in a polythene bag/bowl. I don't actually own a food processor and so instead broke up the oatcakes and 'whizzed' them with my hand-blender (just make sure to cover the top of the bowl with a clean kitchen towel or your kitchen will be covered in pieces of oatcakes... trust me!!!)

And now is for the fun part... Place the flour on a separate plate and the egg in a shallow bowl. Roll the chicken strips (x 16) in the flour, then dip in the egg, allowing any excess to drip back into the bowl. Roll in the crushed oatcakes until thoroughly coated.

Once you've dipped and rolled place the chicken pieces on a non-stick baking tray and drizzle with the oil (I sprayed with 1kcal spray oil instead).

Then cook in the preheated oven for 15-20 minutes or until thoroughly cooked and the coating is crisp and golden.
While the chicken is cooking you can make the salsa.. for which you will need to mix:

Back to the chicken.. once cooked, simply serve with lettuce leaves, lime wedges and salsa.. YUM!!
I have to say that this really was one of the most delicious meals I have ever tasted.. and it's super healthy too! You can serve this dish as a starter or as a main course with sweet potato wedges.. it'll go down a treat I assure you!
