boys in their fort

so.. my parents and grandma went away to vancouver for the week. darrick and I held up the fort.. and cooked a lot more than we normally do.

french toast

our whole goal was to try to eat up as much food possible in our fridge, in the pantry etc. we started off with a loaf of bread, which i made into french toast. I added details i've never really tried before.. i covered the outside with oats that added another layer of crisp (idea from chef Michael Smith) and then i stuffed one with pineapple cream cheese and the other with peanut butter (like they do in chinese cafe restos) I guess May isn't the only one making french toast!

crab risotto

so.. i mentioned before that i bought a jamie oliver 20 min apple iphone app. its amazing! very clear, and easy to use.. and a great recipe. the only thing i'd say is it took at least double the time.. i dont think it accounts for the prep time in the 20 mins. So we made a crabmeat risotto, steph came over and we had this for dinner! It served about 6 full servings for about a $20 of a total expense, not bad! On top of the risotto is a Fennel salad with parsley, basil, and lemon juice. booya!

kale soup

this is a favourite of ours, but May's the one who always makes it. She got it from this little soup cookbook, and since i have all her stuff right now, i decided to make it. Kale is a good source of Vitamin A, Beta Carotene and Iron. There is Chorizo Sausage to add meat and spice, and baking potatoes that are cooked and smashed to thicken the soup. Very simple, it doesn't require any broth, and is absolutely hearty and delicious.

butter cookies

over the past few weeks we've been munching on these bad boys. these are danish butter cookies and i remember eating them all the time when we were kids. the butteryness with the sugar crystals just make this possibly the best cookie ever. its amazing how the different shapes change the taste and eating experience! I like the pretzel looking one the best!
